The Shagbark Hickory Tree grows very large (75-100 ft. tall) with a deep taproot that forces the tree to grow quickly with a tall trunk and a narrow, but irregular, crown and rough, shaggy, light gray bark. The bright gold leaf color of the Shagbark Hickory Tree begins to develop after the first frost. Shagbark hickories are stable. I have created a whole-tree frame of shagbark hickory for our great room. I felled the trees and peeled the bark in April. On the surface of the sapwood are ripples (small ridges and valleys) running parallel with the tree.

The bark is the most distinctive feature of the shagbark hickory (hence its name). Large pieces of thick bark turn up at the ends, giving the tree trunk a shaggy look. To harvest the bark for this recipe, break off pieces of bark four to six inches long from the loose, shaggy ends of the bark strips.
